Water Melon & Coconut Sorbet
Recipe: Kashmiri Borkakati Nath
Ingredients:
Water melon, cubed and de-seeded – 4 cups
Coconut milk – 1 cup
Lime juice – 1 tbsp
Honey or sugar – 4 tbsp

Method:
Place all the ingredients in a blender and blend until smooth. Have an adult help you, while you use electrical gadgets.
Pour into an ice cream tin or into ice lolly stand and freeze for 6 hours.
Take it out of the freezer and scoop into bowls, or if frozen in ice lolly stand, take them off the stand and enjoy.
Kumol Saul Salad

Soaked and strained kumol saul – 1 1/2 cup
Baby spinach – 1 1/2 cup
Mosundori leaves, chopped – 8-9
Cherry tomatoes, cut into halves – 1 1/2

Shallots – 4-5 slices
Roasted and chopped walnuts – 3 tbsp
For dressing:
Lemon juice – 2 tbsp

Pink salt – a pinch
Method:
Mix all the ingredients together.
Beat the dressing ingredients and drizzle on top of the salad. Serve cold.

Oreo Cheese Balls

Ingredients:
Packs of Oreos (any flavour) – 2
Cream cheese – 2 heaped tbsp
Nutella

Choco chips or confetti
Method:
Open the pack of Oreos, and separate the cookies from the cream.
Put the cookies in a zip lock bag and give it a good bash with the help of a rolling pin. The Oreos should be powdered.
Now take 2 heaped spoons of cream cheese and mix well with the left over cookie cream. Mixture should be lump-free.

Mix the cream cheese mixture with powdered Oreos.
Once uniformly mixed, roll small balls out of it and refrigerate for at least half an hour or until set.
Meanwhile take some Nutella in a bowl, and confetti or choco chips in a wide dish.
Once set, dip the balls in the Nutella, and then immediately roll them in confetti or choco chips.
Delicious treats are ready!

Marie Biscuit Cake

Ingredients:
A packet of Marie biscuits
Butter – 3 tbsp
Jaggery powder/honey – 3 tbsp

Milk – 130 ml
Chocolate sauce – ¼ cup
Method:
Grind the biscuits into fine powder in the blender.
Take a mixing bowl and add the biscuit powder, butter, jiggery powder, milk and chocolate sauce and whisk it well.
Pour the mixture into a cake pan.
Deep freeze it for half an hour then move it to the fridge for an hour.
Sprinkle powdered sugar or chocolate chips, if you like, and cut them into bite size.
