Honey Melon Salad
Come summers, and we can’t help but start thinking about the refreshing goodness of melons.
To make this light and lovely salad, you would require a big bowl to make the perfect dressing. For the dressing, take a bowl of yoghurt and add about two tablespoons of honey, two tablespoons of pepper powder, four chopped basil leaves and salt, and mix well.
In another bowl, throw in bite-size balls of watermelon, cantaloupe, musk melon, and sun melon, and give them a good mix. Pour the dressing on the top of the fruits and mix well. Sprinkle some chaat masala and add more honey over the platter. At last, garnish with mint leaves. Your Rainbow Melon Salad is ready!
Raw Mango And Papaya Salad

All you need is a ripe pomelo, two finely chopped red chillies, mustard, oil, roasted peanuts, two teaspoons of mustard oil, and salt. Peel the pomelo and separate the arils neatly. The mustard oil helps in the smooth separation of the arils. Mix the arils well with the other ingredients. Serve immediately.
Greek Chicken Quinoa Salad
This Greek Chicken Quinoa Salad is so fresh, light and flavorful and one of the healthy salads – perfect for lunches! In a large skillet, bring a tablespoon of oil over medium-high heat. Add minced garlic, dry basil, oregano and rosemary and stir into the oil. Cook for a minute until fragrant. Add few chunks of chicken to the pan and stir to coat in the oil and herbs. Cook, stirring occasionally, for 4-6 minutes or until the chicken is cooked through. Remove from heat and set aside to cool. In a small bowl, combine all of the dressing ingredients – olive oil, white wine vinegar, fresh lemon juice, salt, black pepper and yellow mustard – and stir together until combined. In a large serving bowl, combine the quinoa, chicken, basil, feta cheese, spinach, tomatoes, cucumber and olives and stir until mixed. Pour the dressing from the small bowl over the quinoa mixture and stir until the salad is evenly coated with the dressing. Serve at room temperature or chilled.
